I made a killer baked ziti tonight. I used this recipe but in reality, I just used it for the cheese topping recipe and cooking temp/time. I used my own spaghetti sauce recipe that I have been using for years and I believe is amazing.

My family seems to love it too so I am not just blowing smoke up my own ass 😉

I am obviously absolutely not a recipe blog because I actually loathe cooking, but I will share the spaghetti sauce recipe because yummy things need to be shared.

And this recipe never fails me.

I’ll put it at the bottom of the post.

I got a new jumpsuit from Everlane and I love it. I wore it today, and I have been contemplating trying to wear it a different way every day this week.

I am undecided at the moment, we will see tomorrow if I feel like wearing it again already.

It’s a great one for summer.

I sold something on Poshmark again that was down in the storage locker. Holy crap it is a nightmare to get stuff out of there at the moment.

Tom was supposed to help me this time but he fell asleep, so I went down and told the kids if I didn’t return it is because I got stuck and to send dad down to help.

I basically had to pull the front items out piece by piece and climb up some boxes, then shimmy over on my stomach.

Luckily they were in the second bin I looked in.

I found a bunch of other stuff that is listed so I just pulled out as much as I could and brought them up just in case they sell.

I really need to figure that shit out for organization, and somehow get those bins at the back to be located at the front.

I also need Value Village to open back up so I can drop off all the things that need to be donated. I have 6 extra-large clear garbage bags full of clothes, linens, and toys in the front hall that need to go from our move.

The maintenance people are coming this week to complete the yearly duct cleaning in each unit which means that I also have to make those bags temporarily disappear that day, as well as move my desk since it is right next to the vent they need access to.

I also need to make it look tidy.

Sigh. We have too much shit.

Stay Safe.

Spaghetti Sauce Recipe

Prep Time: 20 minsCook Time: 2 hrs Total Time: 2 hrs 20 mins

Ingredients

  • 1 can crushed tomatoes 796 ml
  • 2 cans crushed heirloom tomatoes 398 ml each
  • 1/4 cup tomato paste
  • 450 kg lean ground beef
  • 5 crushed cloves of garlic
  • 2 tsp oregano
  • 2 tsp basil
  • 2 tsp onion powder
  • 2 tsp sugar
  • 1 tsp salt
  • 1/2 tsp crushed red pepper flakes
  • pepper
  • 1 bay leaf
  • knob of butter

Instructions

1. Brown the beef in olive oil in a large sauce pan. When it is almost done add garlic and saute together. If there is lots of fat then drain, if not I tend to just leave it.

2. Mix in tomatoes paste for a minute, then add in premeasured spices (except bay leaf). Mix together well on med-low heat.

3. Add all cans of crushed tomatoes and mix well. Bring to a low boil and add bay leaf and butter.

4. Cover with lid and simmer on low for a minimum of 45 minutes. Stir occasionally. This sauce tastes better the longer it sits.

Notes

You can see that this isn’t very veggie intensive, but that is because my youngest doesn’t eat many vegetables so I replaced onions with onions powder and diced tomatoes with crushed. It also tastes really good with mushrooms.

Sometimes I will omit the salt and throw in a beef boullion cube instead for more depth. A splash of wine never hurts too.

It tastes amazing refrigerated and reheated as leftovers.
